Rough Draft Atlanta is partnering with Community Farmers Markets to let you know what’s in season at your local market. Each week, we’ll share a list of ingredients that are farm fresh, along with a couple of recipes that include those products.
Here’s what you’ll find in the way of produce at the farmers market this week: Peppers, eggplant, tomatoes, winter squashes (pumpkins, butternut aquash, candy roaster squash), apples, beans, garlic, onions, arugula, kale, potatoes, microgreens, turnips, radishes, okra, sweet potatoes, gourmet mushrooms (oyster, chanterelles, lion’s mane, shiitake, chanterelles), pears, corn, persimmons, and herbs (basil, mint, lemon balm, wormwood, cilantro, oregano, parsley, chives, dill).
Look for these specialty items: Pecans, smoked salmon and trout, flowers (marigolds, sunflowers, cosmos, mixed flower bouquets), pastured pork, wild caught shrimp, eggs, goat + sheep cheese, milk, jam, chocolate, honey, oils, tea blends, cold pressed juices, hot sauce, vinegars, nut butters, spice blends, ghee, pickles, pasta, and tortillas.
Atlanta non-profit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. Operating weekly outdoor farmers markets as well as rotating farm stands are strategies by which the organization addresses food access in Atlanta. CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses.

Fall Frittata Recipe:
Ingredients (2-3 servings):
- 6 farm eggs
- Sea salt to taste
- Freshly cracked black pepper to taste
- ¼ cup heavy cream
- 1 tsp ghee
- 2 bell peppers
- 1 cup sliced lion’s mane mushrooms
- 1 cup baby kale, washed and stems removed
- ½ cup green onion tops, sliced
- ½ cup feta
Directions:
- Preheat the oven to 350˚.
- Crack the eggs into a large bowl and add a healthy pinch of salt and pepper. Whisk vigorously to break up the eggs, then add the cream. Continue whisking until the eggs and cream are combined.
- Heat the ghee in a non-stick or cast iron 8 inch skillet on medium-high heat. When the ghee just barely starts to smoke, add the sliced mushrooms. Let them cook for a minute without stirring them.
- Once they start to become golden brown, turn the heat down to medium and stir. Add the peppers to the pan and cook for 3 more minutes.
- Next add the kale. Let it begin to wilt.
- Now pour the egg mixture into the pan. Do not stir. Sprinkle the green onion and feta on top of the pan. Let the eggs cook on the stove undisturbed for 1 full minute.
- Transfer the pan to the oven and cook the frittata for 10 to 15 minutes, until the top is set and firm to the touch. Remove from the oven.
- Flip the frittata out onto a cutting board and divide it into 8 pieces. Enjoy!

Vegetable Spring Rolls Recipe:
Ingredients:
Vegetable Egg Rolls:
- ¼ cup each, sliced thin: shiitake mushrooms, daikon radish, boo choy, yard long beans, sweet peppers, garlic chives
- 2 gloves garlic, minced
- ½ inch of ginger, grated
- 1 tsp each: sesame oil, soy sauce, and rice vinegar
- 12-14 egg roll sheets
- Sunflower oil
- Water
Sweet and Sour Apple Sauce:
- 1 apple, chopped
- ¾ cup pineapple juice
- 1 tsp each: apple cider vinegar, sweet paprika powder, brown sugar, salt, and (optional if you like a little kick) chili oil
Directions:
Vegetable Egg Rolls:
- In a wok or iron skillet heat the sesame oil on high and add the mushrooms, cook for 2 minutes then add the ginger and garlic.
- Cook 2 minutes, stirring frequently, then add the peppers, radish, and beans.
- Cook 2 minutes then add the soy sauce, vinegar, bok choy, and chives. Stir then remove from the heat.
- Allow the mixture to cool then fill an egg roll sheet with a tablespoon of the mix, roll up snuggly from the bottom over the filling, fold in the sides, then moisten the top and roll to close.
- Once the egg rolls are all shaped, fry in 350° oil till golden brown.
- Serve warm with dipping sauce.
Sweet and Sour Apple Sauce:
- Cover the saucepan and allow to simmer on low for 10 minutes.
- Add the softened apples, juice, and the rest of the ingredients to a blender. Blend until completely smooth then add back to the saucepan and heat on low for 5 minutes.
- Pour into a serving bowl to serve warm or cold.
