Savory Grits Recipe:
Ingredients:
- Tomatoes
- Mixed sweet peppers
- Sweet onion
- Garlic
- Mizuna
- Coarse ground grits
- Dried split green peas
- Miso
- Safflower oil
- Apple cider vinegar or white wine
- Salt
- Pepper
- Red pepper flake
- Your favorite dried herbs (suggestions in directions)
- Vegan butter (optional)
Directions:
- Start by cooking your split peas and grits. Cook your grits down in water whisked with sweet white miso, a touch of salt, and then warm up once cooked with a little more miso.
- Cook your peas in salted water and then season, once cooled, with some white wine, tekka, pepper, and lovage. Keep it simple!
- Caramelize your onions with low heat, a little vinegar or white wine, salt, and safflower oil (to start them out before they sweat).
- Once these are translucent and beginning to caramelize, add in tomatoes and sweet peppers that you’ve coarsely sliced in the interim. Reserve some sweet peppers for garnishing later.
- Let the onions, tomatoes, and peppers cook down into a rich sauce (lid on!), and then add in garlic once the sauce is cooked. Cook with garlic for just a few more minutes.
- Now add your grits to your split peas, drown in your stovetop sauce, top with raw sweet peppers and mizuna, and enjoy!
